AC Guard - Smart Power Connection

The AC guard is a smart power distributing device that makes it possible to connect the oven to a smaller circuit breaker. This means that the oven distributes the power to the decks that need it most. With an AC guard you don’t need to upgrade the power into your bakery, the oven handles it by itself.

Counterflow

The heat exchange in the oil and gas ovens follows the Counter flow exchange principle. The air inside the oven that passes the heat exchange initially meets the coolest gasses, gradually warming up from the increasingly hotter gasses. The result is high operating temperatures and low heating costs.

IBS - Increased Baking Surface

Our patented system ensures that everything being baked receives equal heat on all sides.
At Sveba Dahlen innovation is part of our history. IBS – Increased Baking Surface – is an example of this. The patented system has been developed to give alternate rotation of the items in the oven. This means that the products being baked receive equal heat on all sides. Baking is faster, more even and energy efficient. This will be noticeable both in the taste and at the checkout.

Steam Function for Deck Oven

Sveba Dahlen's deck ovens feature a generously adapted steam system that optimizes bread's ability to rise and achieve the right crust character. A plentiful amount of steam is rapidly and explosively dispersed throughout the entire oven chamber at an optimal steam temperature. Cascad Steam System

The Cascad steam system quickly provides powerful steam. It is built out of aluminium rods and stainless steel, making the steam extra clean. The good heating properties of aluminium guarantee rapid recovery, leading to a continual and uninterrupted baking process.

Slow Start

Gentle and gradual accelerating rotation of the rack for baking products sensitive to bumps and blows, or that risk moving from vibrations.

Frequency converters for fans

Sveba Dahlen rack ovens can be equipped with optional frequency converters for fans. With this function, airflow speed in the oven chamber can be adjusted directly from the oven control panel which can be beneficial if the product is delicate, such as meringue or macarons or has topping which risks being dislodged.

AES – Automatic Evacuation System

AES - Automatic Evacuation System automatically activates the oven fan at the end of baking sequence or when the oven door i s opened. AES is optional for Sveba Dahlen rack ovens and prevent hot and humid air from the oven from spreading throughout the premises, creating a more pleasant and safer working environment.
