The Instore Breadline 120 is a bread line that is easy to adapt to both the layout of the premises and to the bread that is to be baked. Specially made for producing bread without need for an intermediate proving time. In addition, the entire flow can be easily and safely managed by one person, from start to finish. The Instore Bread Line 120 can be set up in three different ways depending on preference and available space.

BR-2000
Inclined belt rounder with easily adjustable moulding track for dough weights from 50 up to 1000 grams. The moulding track is easy to  fold up when its not in use. 

MO-300S
Moulder with centrally adjustable infeed hopper, curling net and foldable pressure board 650x1100 mm. Adjustable side guides and ergonomic collection tray.

 

How it is done
The dough is ready to start its transformation into finished bread. It is first placed in the hopper on the divider and then the speed and weight are set, to obtain the desired number of pieces and size. Once this is done, it is divided up into pieces of dough based on these settings.  The dough rolls on in the belt rounder, which has been set to the correct height, based on the size of the pieces. The baker keeps an eye on the flow and checks that everything is running as it should. Then he collects the pieces and places them on the pressure board, where they will rest for a while on cloth. The bread is then shaped into its final form in the moulder. Thanks to the entire process, the baker has got the dough ready for the prover, simply and efficiently. The ­design of the bread line means it can be operated safely by just one person. The procedure is then repeated using different settings to create different types of bread. The end ­result is hot dog buns, French bread, two different types of baguette and rolls.

8. The moulding track on BR-2000 is provided with gas springs for easier opening. To be used when you do not want to mould your products. The moulding track lifts up and the belt transfers the products directly to the MO-300S.
